Recipe: Chilled Strawberry Soup

Summer is a great time to enjoy many of our favorite foods – fresh fruit, smoothies, ice cream – but it’s not an ideal time for hot soups.

At Friendship Village of Dublin, our residents frequently request one of their favorite summer dishes: chilled strawberry soup. The great thing about strawberry soup is that you can eat it an appetizer, a dessert or both if you’re really hungry!

Here is our recipe for chilled strawberry soup. Try serving this dish next time you have visitors. Not only will they be impressed, but they’ll be coming back for seconds.

Chilled Strawberry Soup

3 pounds of pureed strawberries

4-6 oz. cups of vanilla yogurt

1 large scoop of your favorite vanilla ice cream

Mix all ingredients well and chill. Makes 8 servings.
